Are the servers updated to the late version of Garry's Mod?

Possibly. No.
You are most likely opt as a beta tester for gmod, So it updated for you so you can test out the new 'beta'
Nothing changed for me, Or updated for me on gmod.

So go to Library > Right click gmod > Properties > Got to Betas TAB & Opt out of beta.
This will ensure you don't update to any betas of gmod, Because the beta could be unstable and messed up.

Gmod hasn't been updated, But the people who are opt as beta testers. Their gmod updated.
 
So.. why did you ask a question and then answer it yourself? Seems a bit.. pointless?
